Tuck Into This Tasty Irish Stew!

On a cold winter’s day there’s nothing more comforting than a bowl of traditional Irish stew. You’re lucky enough if you get this made for you, but try not to panic if you have to prepare this hearty meal yourself.  It’s a very simple recipe and doesn’t take too long to complete. Once you are tucking into it you’ll be glad you made the effort.    

Dress the table with one of our tablecloths from Giftware Ireland and start prepping a stew you are sure to find tasty and fulfilling.

Here’s what you need for the ingredients:

  • Large potatoes – About 8 should be fine
  • 4 large carrots – Chop them as chunky you like
  • 2 large onions – Cut thick or thin
  • 800g of chopped lamb – Diced into decent sized segments
  • Salt and pepper to season

This is how you make it:

Peel and chop the onions as thick or as thin as you like and leave to one side in a dish. Next, wash and chop the carrots into chunked sections, cut them as thick as you want and place them in the dish with the onions. Wash and peel the potatoes and cut them in half before adding them to a casserole pot. Slice the lamb into manageable chunks and add them to the potatoes in the pot. Next, fill the casserole pot with water and heat it up on the hob until the water boils. When the water boils, tip in the onion, the carrots, and season well with salt and pepper, then turn the heat down to a low boil. Let the stew simmer until the meat and the vegetable are cooked through whilst stirring from time to time.

In total, it should take about an hour for the stew to cook thoroughly, just make sure the meat is nice and tender and the potatoes are totally soft in the middle.

Serve as you like!      

Once the stew is ready you can serve it exactly as you want. We love it with chunks of freshly baked buttered bread and you might want to wash it down with your favourite tipple.
